removing epidermis

What is the best method for removing the epidermis on  a cowhide? While keeping the hair on it.....

I believe you are asking how to skin the animal.  If you have never skinned an animal I would find someone who has and have them help you.  It would be much better than me trying to explain it in text.


The basics:

Hang the animal from the back legs if possible.
Make a single cut from the genitals to the neck (may already be cut from field dressing)
Make a cross cut from inner thigh to inner thigh
Now begin to peel the skin using a very sharp knife to help the peeling process.
Proceed until the hide is removed from the body.

There may be some large chunks of meat and fat still attached to the hide.  Carefully remove them

Salt the hide.
